Delicious Polish Fruit Cake!

Are you looking for a tasty recipe that is not too sweet, light and absolutely delicious? If you’re a foodie, you’ll definitely LOVE this traditional Polish fruit cake. You can make it your own and use whatever fruits you wish.

It’s perfectly soft, not too dry or moist. Best part – it’s super easy to make. This is a cake my family enjoys during any season. We bake it in the morning and it’s ready early afternoon. Typically, the entire cake is gone by evening!

Ingredients

3 cups flour

1 ½ cup sugar

6 eggs

2 sticks of butter

1 small lemon for juice

1 full tablespoon of sour cream

½ teaspoon baking soda

2 small packages of strawberries

2 small packages of blueberries

Instructions

Wash the strawberries and blueberries thoroughly and allow them to dry. Cut the strawberries in halves in preparation for placement into the dough.

In a mixing bowl place the butter (you can melt the butter if you wish) and sugar and mix it for 4-5 minutes.

Add one egg at a time into the mixture. After eggs are added, add the sour cream and lemon juice.

Once the mixture is smooth, add one cup of flour at a time and allow mixture to keep mixing until smooth. Add the baking soda and keep mixing for about 5 minutes.

Take the batter and pour it onto a 20x12 in baking pan evenly. Make sure the baking pan is sprayed with butter for dough not to stick to the pan after it’s baked.

Take the strawberries and arrange them upward in straight lines.

After placing the strawberries, sprinkle the blueberries over the strawberries and dough.

Place the pan into the oven preheated at 360F. Bake for appx 50 minutes.

Let the cake cool off. Afterwards, sprinkle it with some powdered sugar and you are all set!
